Fajita Chicken Casserole

Ingredients:

  • 3 cups cooked chicken, shredded
  • 2 bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup frozen corn, thawed
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 1 (10 oz) can diced tomatoes with green chilis, undrained
  • 1 tablespoon fajita seasoning

Instructions:

  1. Preheat Oven: Set your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Combine Ingredients:
    • In a large bowl, combine the shredded chicken, bell peppers, onion, corn, black beans, diced tomatoes, and fajita seasoning. Mix well.
  3. Assemble Casserole:
    • Transfer the mixture to the prepared baking dish.
    • Sprinkle with shredded cheddar cheese.
  4. Bake:
    • Cover the dish with aluminum foil and bake for 25 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.  
  5. Serve: Serve hot, optionally garnished with fresh cilantro, sour cream, or avocado slices.

Tips:

  • Pre-Cooked Chicken: Use leftover cooked chicken or rotisserie chicken for convenience.
  • Vegetable Variations: Add other vegetables like zucchini, broccoli, or spinach to the casserole.
  • Spice It Up: Adjust the spice level by adding more or less fajita seasoning, or use a hotter variety of chili peppers.
  • Toppings: Customize your casserole with your favorite toppings like salsa, guacamole, or hot sauce.
  • Serving Suggestion: Serve with rice, tortilla chips, or a side salad.
