Deliciously Moist Zucchini Bread With Chocolate Chips


Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil  
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups grated zucchini
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or chocolate chips (optional)

Instructions:

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. Combine dry ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In another bowl, whisk together oil, sugars, applesauce, vanilla extract, and egg.
  4. Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Add zucchini and mix-ins: Gently stir in the grated zucchini and any desired add-ins.
  6. Bake: Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.  
  7. Cool: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Tips:

  • Don't overmix: Overmixing can lead to a tough bread.
  • Grate, don't squeeze: Grate the zucchini and lightly press out excess moisture.
  • Add-ins: Feel free to experiment with different add-ins like blueberries, cranberries, or chocolate chips.
  • Storing: Store leftover bread in an airtight container at room temperature for a few days or in the freezer for longer.
