Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2
cup vegetable oil - 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/2 cups grated zucchini
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or chocolate chips (optional)
Instructions:
- Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- Combine dry ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In another bowl, whisk together oil, sugars, applesauce, vanilla extract, and egg.
- Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Add zucchini and mix-ins: Gently stir in the grated zucchini and any desired add-ins.
- Bake: Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Tips:
- Don't overmix: Overmixing can lead to a tough bread.
- Grate, don't squeeze: Grate the zucchini and lightly press out excess moisture.
- Add-ins: Feel free to experiment with different add-ins like blueberries, cranberries, or chocolate chips.
- Storing: Store leftover bread in an airtight container at room temperature for a few days or in the freezer for longer.
