White Chocolate Raspberry Muffins


Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1.5 cups white chocolate chips
  • 1 cup fresh raspberries
  • 1/2 cup chopped nuts (optional)

Instructions:

  1. Preheat oven: Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Combine dry ingredients: In a bowl, whisk together flour, baking powder, and salt.
  3. Combine wet ingredients: In a separate bowl, beat butter and sugar until combined. Beat in eggs one at a time, then stir in vanilla extract.
  4. Mix wet and dry ingredients: Gradually add dry ingredients to wet ingredients, alternating with milk. Mix until just combined.
  5. Add mix-ins: Gently fold in white chocolate chips, raspberries, and nuts (if using).
  6. Bake: Fill muffin cups 2/3 full with batter. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Drizzle: Melt remaining white chocolate and drizzle over cooled muffins.
