Ingredients:
For the Cookies:
- 2/3 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 teaspoon baking powder
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
For the Royal Icing:
- 2 cups powdered sugar, sifted
- 1 teaspoon vanilla extract

- Green and brown gel food coloring
Instructions:
Make the Cookie Dough:
- Cream butter and sugar: In a large bowl, cream together butter, granulated sugar, and powdered sugar until light and fluffy.
- Add wet ingredients: Beat in egg and vanilla extract until combined.
- Combine dry ingredients: In a separate bowl, whisk together flour and baking powder.
- Mix wet and dry ingredients: Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Chill dough: Wrap dough in plastic wrap and chill for at least 30 minutes.
Roll Out and Cut Cookies:
- Preheat oven: Preheat oven to 375°F (190°C).
- Roll out dough: Roll out chilled dough on a lightly floured surface to about 1/4-inch thickness.
- Cut out shapes: Use dinosaur cookie cutters to cut out shapes.
- Bake cookies: Place cookies on a parchment-lined baking sheet. Bake for 7-9 minutes, or until lightly golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Make the Royal Icing:
- Combine ingredients: In a bowl, combine powdered sugar, vanilla extract, and milk. Beat until smooth and spreadable.
- Color icing: Divide icing into two bowls. Color one bowl green and the other brown using gel food coloring.
Decorate Cookies:
- Pipe icing: Transfer icing to piping bags fitted with small round tips.
- Outline and fill: Pipe an outline around each dinosaur cookie. Fill in the center with icing.
- Add details: Use a toothpick to add details like eyes, spots, and stripes.
Let cookies dry completely before storing.
Tips:
- For a more flavorful cookie, add a pinch of salt to the dough.
- To prevent the cookies from spreading too much, chill the dough for at least 30 minutes.
