Baked Broccoli Tots with Garlic and Parmesan

Ingredients:

  • 2 cups broccoli florets, blanched
  • 1 egg, beaten
  • 4 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 3/4 cup gluten-free breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Olive oil spray

Instructions:

  1. Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine ingredients: In a large bowl, combine broccoli florets, egg, garlic, Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper. Mix well.
  3. Form bites: Shape the mixture into bite-sized balls or cylinders.
  4. Cook: Place the broccoli bites on the prepared baking sheet. Spray with olive oil. Bake for 20-25 minutes, or until golden brown and crispy.
  5. Serve: Serve immediately.

Optional Additions:

  • For extra flavor: Add chopped red pepper flakes, dried herbs (e.g., oregano, thyme), or a sprinkle of nutritional yeast.
  • For a richer texture: Add a tablespoon of mayonnaise or cream cheese to the mixture.
