Roast Duck Pizza with Figs and Arugula

Ingredients:

For the Duck:

  • 3 duck legs (skin on)
  • 15 ml Shaoxing wine
  • 15 ml hoisin sauce
  • 2.5 ml dark soy sauce
  • 5 g salt
  • 0.25 g pepper
  • 0.25 g five-spice powder

For the Pizza:

  • 1 recipe fool-proof pizza dough
  • 30 ml water
  • 15 ml soy sauce
  • 5 ml hoisin sauce
  • 10 ml rice wine vinegar
  • 5 ml honey
  • 0.25 g salt
  • 0.25 g five-spice powder
  • 225 g grated mozzarella cheese
  • 4 figs (sliced)
  • 30 g arugula
  • 30 ml extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Marinate the Duck: Combine the marinade ingredients and coat the duck legs. Marinate overnight for best results.
  2. Roast the Duck: Roast the marinated duck legs until crispy and cooked through. Shred the meat and reserve the pan juices.
  3. Prepare the Pizza Sauce: Combine the sauce ingredients and heat until thickened.
  4. Assemble the Pizza: Roll out the pizza dough, spread with the sauce, top with cheese, shredded duck, and fig slices.
  5. Bake the Pizza: Bake the pizza in a hot oven until the crust is crispy and the cheese is melted.
  6. Finish the Pizza: Top with arugula, drizzle with additional sauce, and season with salt and pepper.
