Banana Chocolate Muffins


Ingredients:

Wet Ingredients:

  • 2 extra ripe bananas
  • ½ cup yogurt
  • 1 tablespoon almond butter
  • 1 tablespoon coconut oil, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey

Dry Ingredients:

  • ½ cup oat flour

  • ¼ cup rolled oats or quick oats

  • 2 teaspoons baking powder

  • ½ teaspoon cinnamon

  • 3 tablespoons dark chocolate chips


Step 1: Preheat the Oven

Preheat the oven to 180°C (350°F).
Prepare the muffin pan by lining it with paper liners.


Step 2: Make the Oat Flour

If you don’t have oat flour, grind the oats in a mixer until finely ground.
If you already have oat flour, you can skip this step.


Step 3: Mix Wet Ingredients

In a bowl, mash the bananas and then add the yogurt, almond butter, coconut oil, egg, vanilla extract, and honey.
Mix everything until well combined.


Step 4: Mix Dry Ingredients

In another bowl, combine the oat flour, rolled oats, baking powder, and cinnamon.
Set aside 1 tablespoon of dark chocolate chips for topping the muffins before baking.


Step 5: Combine Wet and Dry Ingredients

Slowly add the dry ingredients to the wet ingredients, mixing as you go, until the batter is smooth.


Step 6: Prepare Muffin Tin

Fill the paper liners with the batter.
Sprinkle the reserved chocolate chips on top of the muffins.


Step 7: Bake the Muffins

Bake for 20 minutes, or until the muffins are golden brown.
Enjoy while warm, or let them cool slightly.
