Ingredients:
- 2 tablespoons unsalted butter
- 2-3 medium yellow onions, diced
- 3/4 teaspoon kosher salt, divided
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon granulated sugar (optional, but recommended)
- 1/4 teaspoon black pepper
- 1 tablespoon minced fresh chives
- 3 slices bacon, cooked and crumbled
Instructions:
Caramelize the onions:
- In a large skillet over medium-low heat, melt the butter.
- Add the diced onions and 1/4 teaspoon of the salt. Cook, stirring occasionally, for 25 minutes, or until the onions are soft and golden brown (caramelized).
- Set aside to cool.
Combine the dip ingredients:
- In a mixing bowl, whisk together the sour cream, mayonnaise, garlic powder, onion powder, sugar, remaining salt, and black pepper until smooth and creamy.
- Add the chives, bacon, and caramelized onions and stir well to combine.
Chill and serve:
- Cover the mixing bowl tightly and refrigerate for at least 1-2 hours.
- Serve chilled, garnished with additional bacon pieces and chives if desired, with chips or whichever dippers you prefer.
