Magic Meatball Crackers

 

Ingredients:

  • 1/2 pound ground sirloin
  • 2 tablespoons minced onion
  • 1 clove garlic, minced
  • 3 tablespoons milk or half and half
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 large egg, lightly beaten
  • 1/3 cup Italian seasoned breadcrumbs
  • 48 saltine crackers
  • 6 ounces fresh mozzarella cheese, cut into 24 thin slices
  • 1/4 cup olive oil
  • 1/2 cup marinara sauce for serving, or as needed

Instructions:

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a large bowl, combine the ground sirloin, onion, garlic, milk, salt, pepper, basil, oregano, and egg. Mix well.
  3. Stir in the breadcrumbs until well combined.
  4. Spread the meat mixture in a thin layer on top of 24 of the saltine crackers.
  5. Top each cracker with a slice of mozzarella cheese and another saltine cracker.
  6. Place the crackers on a baking sheet and brush the tops evenly with olive oil.
  7. Bake in the preheated oven for 10-12 minutes, or until the meat is golden brown around the edges and cooked through and the cheese is melted.
  8. Serve with warm marinara sauce for dipping.

Tips:

  • For a spicier version, add a pinch of red pepper flakes to the meat mixture.
  • If you don't have saltine crackers, you can use any type of cracker you like.
  • You can also use shredded mozzarella cheese instead of sliced cheese.
  • To make sure the crackers don't stick to the baking sheet, line it with parchment paper or a silicone baking mat.
