Ingredients:
- 8 ounces elbow macaroni pasta
- 6 eggs, hard-boiled and chopped
- 1/2 cup mayonnaise
- 1/2 cup plain yogurt
- 1 tablespoon Dijon mustard
- 1/3 cup celery, finely diced
- 1/4 cup red onion, finely diced
- 1 small avocado, diced
- 1 tablespoon lemon juice (optional)
- 1/2 teaspoon paprika, plus more for garnish
- 1 tablespoon fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions:
- Cook the pasta according to package directions. Drain and rinse under cold water.
- In a large bowl, combine the eggs, mayonnaise, yogurt, Dijon mustard, celery, red onion, avocado, lemon juice, paprika, parsley, salt, and pepper.
- Add the pasta to the bowl and toss to combine.
- Garnish with additional paprika and serve.
