Deviled Egg Pasta Salad


 Ingredients:

  • 8 ounces elbow macaroni pasta
  • 6 eggs, hard-boiled and chopped
  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 1 tablespoon Dijon mustard
  • 1/3 cup celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1 small avocado, diced
  • 1 tablespoon lemon juice (optional)
  • 1/2 teaspoon paprika, plus more for garnish
  • 1 tablespoon fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Cook the pasta according to package directions. Drain and rinse under cold water.
  2. In a large bowl, combine the eggs, mayonnaise, yogurt, Dijon mustard, celery, red onion, avocado, lemon juice, paprika, parsley, salt, and pepper.
  3. Add the pasta to the bowl and toss to combine.
  4. Garnish with additional paprika and serve.
