Greek Peas Stew with Potatoes

 

Ingredients:

  • 1/3 cup olive oil
  • 1 medium onion, finely diced
  • 1 medium carrot, diced
  • 2 large garlic cloves, minced
  • 2 tablespoons tomato paste
  • 7 ounces crushed tomatoes
  • 1/2 bunch fresh dill, chopped
  • 2 medium potatoes, cut into 1-inch cubes
  • 1 pound peas, fresh or frozen
  • 1 cup water
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and carrot and cook until softened, about 5-6 minutes.
  2. Add the garlic and cook for another minute, until fragrant.
  3. Stir in the tomato paste, crushed tomatoes, and fresh dill.
  4. Add the potatoes, peas, and water. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until the potatoes are fork-tender.
  5. Season with salt and pepper to taste. Serve with crusty bread.
