Churro Cheesecake Bars

 

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Topping:

  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides.

  2. Prepare the Crust: In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of the prepared pan to form an even crust.

  3. Make the Cheesecake Filling: In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract until incorporated.

  4. Pour and Spread: Pour the cheesecake filling over the prepared crust, spreading it evenly with a spatula.

  5. Prepare the Topping: In a small bowl, mix together granulated sugar and ground cinnamon for the topping. Sprinkle evenly over the cheesecake layer.

  6. Bake: Bake in the preheated oven for 30-35 minutes, or until the center is set and the edges are lightly golden.

  7. Cool and Chill: Allow the cheesecake bars to cool completely in the pan. Once cooled, refrigerate for at least 2 hours before slicing.

  8. Serve: Use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve chilled.
