Ingredients:
- 4 chicken breasts or thighs (about 1.5 lbs)
- 2 chipotle peppers in adobo sauce, finely chopped
- 2 tablespoons adobo sauce (from the chipotle peppers can)
- 4 cloves garlic, minced
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon honey (optional, for balance)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro, for garnish (optional)
Instructions:
Prepare the Marinade: In a bowl, combine the finely chopped chipotle peppers, adobo sauce, minced garlic, lime juice, olive oil, honey (if using), salt, and black pepper. Mix well to combine.
Marinate the Chicken: Place the chicken pieces in a large resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is fully coated. Seal the bag and refrigerate for at least 4 hours, or overnight for best flavor.
Preheat the Grill: Preheat your grill to medium-high heat.
Grill the Chicken: Remove the chicken from the marinade, allowing any excess marinade to drip off. Grill the chicken pieces for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.
Rest and Serve: Let the grilled chicken rest for a few minutes before serving to allow the juices to redistribute. Garnish with fresh cilantro if desired.
Enjoy your flavorful Chipotle Lime Grilled Chicken!
