### Ingredients
- 1 pound ground beef or lamb (or a combination)
- 1 small onion, grated
- 2 cloves garlic, minced or grated
- 1 tablespoon chopped mint
- 1 tablespoon chopped parsley
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon sumac
- 1/2 teaspoon Aleppo pepper (or cayenne to taste)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
### Directions
1. Mix all the ingredients into the ground meat thoroughly.
2. Divide the mixture into 6-8 equal portions and shape each portion around a skewer to form long, thin cylinders.
3. Grill over medium-high heat until cooked through, about 2-4 minutes per side.
**Notes:**
- You can use all beef, all lamb, or a mix of both.
- Feel free to experiment with your favorite spices. Some options include fennel, paprika, nutmeg, cloves, ginger, and allspice.
- Cooking methods: grill over an open flame, on a grill, in a pan, or under the broiler.
**Tips:**
- Serve with a simple cucumber and tomato salad, and/or hummus, garlic yogurt tahini sauce, or tzatziki.
