Air Fryer Pork Taquitos

 

Ingredients

  • 3 cups cooked shredded pork tenderloin or chicken
  • 2 1/2 cups fat-free shredded mozzarella
  • 10 small flour tortillas
  • 1 lime, juiced
  • Cooking spray

Instructions

  1. Preheat Air Fryer: Set your air fryer to 380°F (193°C) and allow it to preheat.

  2. Season Pork: Drizzle the lime juice over the shredded pork (or chicken) and gently mix to combine.

  3. Prepare Tortillas: Place 5 tortillas at a time on a microwave-safe plate, cover with a damp paper towel, and microwave for 10 seconds to soften them.

  4. Assemble Taquitos: On each tortilla, add 3 ounces of seasoned pork and 1/4 cup of shredded mozzarella cheese.

  5. Roll Tortillas: Tightly and gently roll up each tortilla to form a taquito.

  6. Prepare for Air Frying: Line the air fryer basket with a piece of foil and lightly grease it. Arrange the taquitos in a single layer, ensuring they don’t touch.

  7. Cook Taquitos: Spray an even coat of cooking spray over the taquitos. Air fry for 7-10 minutes, flipping halfway through, until they are golden and crispy.

    • Oven Method: If you don’t have an air fryer, you can bake the taquitos in a preheated oven at 375°F (190°C) for 7-10 minutes, or until they are crispy and golden brown.
  8. Serve: Serve the taquitos with optional sides like salsa, sour cream, or guacamole.

  • Serving Suggestion: Recommended serving is 2 taquitos per person.
