10 MINUTE ROASTED CHICKEN AND VEGETABLES

 

Ingredients

  • 1 pound boneless chicken breast or thighs, cut into 1-inch pieces
  • 1 cup chopped zucchini, cut into 1-inch half moons
  • 1 cup chopped bell peppers (any color), cut into 1-inch pieces
  • 1.5 cups chopped baby Bella mushrooms
  • 1 cup chopped purple onion, cut into 1-inch pieces
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat.

  2. Prepare Ingredients: In a large mixing bowl, combine the chicken pieces and chopped vegetables.

  3. Season: In a small bowl, mix together garlic powder, onion powder, chili powder, Italian seasoning, salt, and pepper. Pour the olive oil over the chicken and vegetables and toss to coat. Sprinkle the seasoning mix over the chicken and veggies and toss again to ensure everything is well-coated.

  4. Cook: Lightly spray the air fryer basket with olive oil spray. Add half of the chicken and vegetable mixture to the basket, spreading it out in an even layer. It’s okay if some items overlap. Cook for 10 minutes, shaking the basket halfway through to ensure even cooking.

  5. Check and Serve: After 10 minutes, check if the chicken is cooked through (it should reach an internal temperature of 165°F or 74°C). If not, cook for an additional 2-3 minutes. Remove from the air fryer and serve hot, optionally topped with chopped fresh parsley or a squeeze of lemon.
