Hazelnut Chocolate Protein Bars

 

Ingredients

For the Chocolate Topping:

  • 100g dark chocolate (70% cacao recommended)
  • 2 tbsp chopped hazelnuts (optional)

US Customary:

  • 1/2 cup vegan protein powder (chocolate or vanilla)
  • 2 tbsp cocoa powder
  • 1/2 cup hazelnut butter
  • 5 tbsp milk of choice
  • 2 tbsp maple syrup
  • 1/4 cup hazelnuts

For the Chocolate Topping:

  • 3.5 oz dark chocolate (70% cacao recommended)
  • 2 tbsp chopped hazelnuts (optional)

Instructions

  1. Prepare the Base:

    • In a large bowl, mix together the hazelnut butter, maple syrup, and milk until well combined.
    • Add the protein powder and cocoa powder. Stir until the mixture forms a smooth dough.
    • Gently fold in the hazelnuts.
  2. Form the Bars:

    • Transfer the mixture to a loaf tin lined with baking paper. Press it down evenly to compact the mixture.
  3. Prepare the Topping:

    • Break the dark chocolate into pieces and place it in a heat-proof dish. Melt the chocolate in the microwave, stirring every 30 seconds until smooth.
    • If desired, fold in the chopped hazelnuts.
  4. Assemble:

    • Spread the melted chocolate evenly over the protein bar mixture in the loaf tin.
  5. Chill:

    • Refrigerate the mixture until set, about 1-2 hours.
  6. Serve:

    • Once set, remove from the tin and slice into 8 bars.
