Ingredients
For the Chocolate Topping:
- 100g dark chocolate (70% cacao recommended)
- 2 tbsp chopped hazelnuts (optional)

- 1/2 cup vegan protein powder (chocolate or vanilla)
- 2 tbsp cocoa powder
- 1/2 cup hazelnut butter
- 5 tbsp milk of choice
- 2 tbsp maple syrup
- 1/4 cup hazelnuts
For the Chocolate Topping:
- 3.5 oz dark chocolate (70% cacao recommended)

Instructions
Prepare the Base:
- In a large bowl, mix together the hazelnut butter, maple syrup, and milk until well combined.
- Add the protein powder and cocoa powder. Stir until the mixture forms a smooth dough.
- Gently fold in the hazelnuts.
Form the Bars:
- Transfer the mixture to a loaf tin lined with baking paper. Press it down evenly to compact the mixture.
Prepare the Topping:
- Break the dark chocolate into pieces and place it in a heat-proof dish. Melt the chocolate in the microwave, stirring every 30 seconds until smooth.
- If desired, fold in the chopped hazelnuts.
Assemble:
- Spread the melted chocolate evenly over the protein bar mixture in the loaf tin.
Chill:
- Refrigerate the mixture until set, about 1-2 hours.
Serve:
- Once set, remove from the tin and slice into 8 bars.
