Balsamic Soy Roasted Garlic Mushrooms


Ingredients:

  • 2 lbs mushrooms, cleaned and quartered if large
  • 1 tbsp oil (olive oil or vegetable oil)
  • 3 tbsp balsamic vinegar
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, chopped
  • 1/2 tsp fresh thyme, chopped (or 1/4 tsp dried thyme)
  • Salt and pepper, to taste

Directions:

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare Mushrooms:

    • Clean the mushrooms if needed and quarter them if they are large.
  3. Marinate Mushrooms:

    • In a large bowl, toss the mushrooms with oil, balsamic vinegar, soy sauce, chopped garlic, chopped thyme, salt, and pepper until well coated.
  4. Roast Mushrooms:

    • Spread the marinated mushrooms in a single layer on a baking sheet lined with parchment paper or aluminum foil.
  5. Roast:

    • Roast in the preheated oven for about 20 minutes, stirring halfway through. The mushrooms should be tender and slightly caramelized.
  6. Serve:

    • Transfer the roasted mushrooms to a serving dish and serve hot as a side dish or appetizer.
