Instructions:
Mix the Ingredients:
- In a bowl, combine the tahini, mixed seeds, finely chopped dates, finely chopped dried apricots, protein powder, and a pinch of salt.
- Stir until all ingredients are evenly distributed and the mixture is well combined.
Prepare the Pan:
- Line a 21x11 cm (8x4 inch) loaf tin with parchment paper, or lightly grease it.
- Transfer the mixture into the loaf tin. Use a spatula or the back of a spoon to press it down firmly and evenly.
Melt the Chocolate:
- Break up the dark chocolate into small pieces and place it in a heat-proof bowl.
- Add the coconut oil to the bowl.
- Melt the chocolate and coconut oil together. You can do this in the microwave in short intervals (20-30 seconds at a time) or over a pan of simmering water (double boiler method). Stir until smooth and fully melted.
Add the Topping:
- Pour the melted chocolate over the mixture in the loaf tin, spreading it evenly with a spatula if needed.
Set and Slice:
- Refrigerate the loaf tin for 1-2 hours or until the chocolate is set and the bars are firm.
- Once set, remove from the tin and slice into bars.
