Ingredients:
Flank Steak Marinade:
- 1 1/2 cups Teriyaki Sauce (divided) - you can use store-bought or homemade (following your linked Teriyaki Chicken recipe)
Fried Rice:
- 1 egg
- 1 1/2 cups peas and carrots (from a steam bag)
- 1 tablespoon oil (vegetable or sesame)
- 2 cups cooked rice (1-3 days old, dried out)
- 3 tablespoons soy sauce
- 1/2 tablespoon brown sugar
- 1/4 teaspoon granulated sugar
- 1/8 teaspoon ground ginger
- 1 pinch crushed red pepper
Vegetables:
- 2 cups stir fry veggies (such as snow peas, broccoli, bean sprouts)
Instructions:
Prepare Teriyaki Sauce:
- Make the Teriyaki sauce according to your linked recipe. Set aside 3/4 cup of the sauce for marinating the flank steak.
Marinate Flank Steak:
- Place the flank steak in a ziploc bag and pour 3/4 cup of the prepared Teriyaki sauce over it. Seal the bag and place it in the freezer to marinate.
Preheat Oven:
- Preheat your oven to 350°F (175°C).
Cook the Egg:
- Heat a small skillet over medium heat and add a dash of oil.
- Whisk the egg in a bowl and pour it into the heated skillet. Lift and tilt the skillet to allow the raw egg to run underneath until it is set. Gently flip the egg to cook the other side.
- Remove the cooked egg to a cutting board and cut it into small pieces.
Prepare Fried Rice:
- In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
- Add the cooked rice and stir fry for about 3 minutes, stirring occasionally.
Season Fried Rice:
- In a small bowl, whisk together the soy sauce, brown sugar, granulated sugar, ground ginger, and crushed red pepper.
- Pour the sauce mixture over the rice and stir to coat evenly.
Add Veggies:
- Add the peas and carrots (from the steam bag) to the rice in the skillet. Stir to combine.
Prepare Casserole Dish:
- Transfer the fried rice and veggies to a 9x13-inch baking dish, spreading it out evenly.
Cook Flank Steak:
- Remove the marinated flank steak from the freezer and slice it thinly.
- Heat a skillet over medium-high heat and add a little oil.
- Once hot, add the sliced flank steak and cook for 3-5 minutes until browned and cooked through.
Assemble Casserole:
- Add the cooked flank steak slices and the chopped egg pieces to the baking dish with the fried rice and veggies.
Drizzle with Teriyaki Sauce:
- Drizzle some of the remaining Teriyaki sauce (to taste) all over the casserole dish.
- Toss gently to coat everything in the sauce.
Bake (Optional):
- If desired, you can bake the casserole in the preheated oven for a few minutes to crisp up the top.
Serve:
- Serve the Teriyaki Flank Steak with Fried Rice and Veggies hot, optionally with an additional drizzle of Teriyaki sauce.
