Ingredients
For the Crust:
- 1 cup dates
- 1 cup walnuts
For the Filling:
- 1 container Culina Yogurt (Blueberry Lavender or your preferred flavor)
- 2 scoops Collagen Peptides
- 1 cup cashews (soaked overnight)
- ⅓ cup maple syrup
- Sea salt, to taste
For Topping:
- Blueberries
- Shredded coconut flakes
Directions
Prepare the Crust:
- Soak Cashews: If you haven’t already, soak the cashews overnight in water. Drain before using.
- Blend Crust Ingredients: In a food processor, combine 1 cup of dates and 1 cup of walnuts. Blend until the mixture is well combined and sticks together.
- Press into Pan: Line a bread pan with parchment paper. Press the date and walnut mixture evenly into the bottom of the pan to form the crust.
- Chill Crust: Place the pan in the freezer for a few minutes to firm up while you prepare the filling.
Prepare the Filling:
- Blend Filling Ingredients: In the food processor, combine the Culina Yogurt, 2 scoops of Collagen Peptides, soaked and drained cashews, maple syrup, and a pinch of sea salt. Blend until the mixture is smooth and creamy.
- Pour Over Crust: Remove the pan from the freezer and pour the yogurt mixture over the crust. Spread evenly with a spatula.
Add Toppings:
- Top with Blueberries and Coconut: Sprinkle blueberries and shredded coconut flakes (or your preferred toppings) over the filling.
Freeze:
- Freeze: Place the pan in the freezer and let it freeze for at least 3 hours, or until firm.
Serve:
- Cut and Enjoy: Once frozen, remove the treat from the pan using the parchment paper. Cut into squares or bars and serve directly from the freezer.
- Storage: Store leftovers in the freezer. Allow to thaw for a few minutes before serving if you prefer a softer texture.
Tips
- Texture Adjustment: If you prefer a smoother filling, you can blend the cashews longer or use a high-speed blender.
- Flavor Variations: Feel free to use different flavors of yogurt or add other fruits and nuts to customize the treat to your liking.
Enjoy your homemade, nutritious, and delicious frozen treat!
