Ingredients
Creamy Sauce:
- 8.8 oz (250 g) firm tofu
- ½ cup (65 g) raw cashews, soaked in boiling water for 10 minutes and drained
- 3 cups (720 mL) unsweetened soy milk†
- ⅓ cup (12 g) nutritional yeast flakes
- 2 vegetable bouillon cubes
- ½ Tbsp (4 g) cornstarch
- ½ Tbsp (2 g) dried oregano
Pasta:
- 11 oz (320 g) dry fettuccine noodles
Beans:
- ½ Tbsp (7 mL) vegetable oil
- 1 large shallot, finely chopped
- 3 cloves garlic, crushed
- 2 cups (340 g) cooked butter beans
Toppings:
- ¼ cup (27 g) seasoned toasted breadcrumbs
- 2 Tbsp (12 g) vegan parmesan (optional)
- ¼ cup (6 g) fresh basil (optional)
- 1 pinch ground black pepper (optional)
Instructions
Prepare the Sauce:
- Add tofu, soaked cashews, soy milk, nutritional yeast, vegetable bouillon cubes, cornstarch, and dried oregano to a high-speed blender.
- Blend until smooth. Set aside.
Cook the Pasta:
- Cook fettuccine noodles according to package instructions until al dente. Drain and set aside.
Cook the Beans:
- Heat vegetable oil in a sauté pan over medium-high heat.
- Add the finely chopped shallot and cook until golden.
- Add crushed garlic and cook for an additional 2 minutes.
- Stir in the cooked butter beans and cook for 3-5 minutes, until beans are lightly golden.
Combine Sauce and Pasta:
- Lower heat to medium. Pour in the prepared sauce and cook for 4-5 minutes, stirring continuously. The sauce will thicken; if it becomes too thick, add a splash of water or plant milk to thin it out.
- Add the cooked pasta and toss to coat evenly.
Serve:
- Garnish with seasoned breadcrumbs, vegan parmesan, fresh basil, and a pinch of ground black pepper (if using).
- Enjoy immediately!
Notes
- Soy Milk: Use plant-based milk fortified with calcium for added nutrition.
- Thick Sauce: If the sauce becomes too thick during cooking, adjust consistency by adding a splash of water or soy milk.
- Seasoned Breadcrumbs: They add a wonderful crunch and flavor, so don’t skip them if possible.
Storage
- Refrigeration: Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheating: Reheat with a bit of unsweetened milk or broth in a pan to restore the creamy texture.
Enjoy your creamy fettuccine with butter beans!
