Date Snickers Recipe

Ingredients:

  • 20 Medjool dates, pitted
  • 1 cup semisweet chocolate chips
  • 2/3 cup creamy peanut butter
  • 1/2 cup chopped peanuts
  • 1/4 teaspoon kosher salt (optional)
  • 1 tablespoon coconut oil (optional, for smoother chocolate)
  • 1/4 teaspoon chili powder (optional, for a spicy kick)

Instructions:

  1. Prepare dates: Pit dates and arrange in a single layer on a baking sheet lined with parchment paper.
  2. Roll dates: Cover with another sheet of parchment paper and roll with a rolling pin to flatten into a rectangle.
  3. Spread peanut butter: Remove top layer of parchment paper and spread peanut butter evenly over dates.
  4. Melt chocolate: Melt chocolate chips with coconut oil (if using) in a microwave-safe bowl. Stir until smooth.
  5. Drizzle chocolate: Drizzle melted chocolate over peanut butter layer.
  6. Add toppings: Sprinkle with chopped peanuts, chili powder (if using), and kosher salt.
  7. Refrigerate: Refrigerate until chocolate is firm, about 1 hour.
  8. Cut and serve: Cut into Snickers-sized bars.

Optional additions:

  • For extra sweetness: Add a drizzle of honey or maple syrup.
  • For a crunchy texture: Add chopped almonds, cashews, or walnuts.
  • For a tangy flavor: Add a squeeze of lemon juice or orange zest to the peanut butter.
