Instructions:
- Preheat oven: Preheat oven to 425°F (220°C). Line a baking sheet with paper cupcake liners.
- Prepare filling: In a bowl, combine sugar and cinnamon.
- Assemble fritters: Lay one pastry sheet flat on a counter. Brush with melted butter, apple butter, and cinnamon sugar. Arrange half of the apples over the sugar. Place a second sheet of pastry on top and seal the edges. Roll the dough into a log and cut into 6-8 rounds. Place in cupcake liners.
- Bake: Bake for 25-30 minutes, or until golden brown.
- Make glaze: Whisk together powdered sugar, milk, vanilla extract, and coffee powder (if using).
- Serve: Drizzle glaze over fritters and sprinkle with sea salt.
