Keto Strawberry Cheesecake Fat Bombs


Ingredients:
  • 1/2 cup fresh or frozen strawberries
  • 3/4 cup softened cream cheese
  • 1/4 cup softened butter
  • 1/2 teaspoon vanilla extract
  • Powdered sweetener, to taste (see options below)
  • Pinch of salt
  • 1/4 cup chopped nuts (optional, such as almonds, pecans, or pistachios)
  • 1/4 cup shredded dark chocolate (optional)

Instructions:

  1. Prepare strawberries: If using frozen strawberries, thaw them and mash with a fork.
  2. Mix wet ingredients: In a mixing bowl, cream together softened cream cheese, butter, and vanilla extract until smooth.
  3. Incorporate dry ingredients: Add mashed strawberries, salt, and powdered sweetener to taste. Fold in chopped nuts and/or shredded dark chocolate, if using.
  4. Sweetener options: Use your preferred powdered sweetener like erythritol, stevia, or monk fruit. Start with a small amount and gradually add more until desired sweetness is reached.
  5. Form fat bombs: Line a small muffin tin or candy mold with silicone liners. Spoon the mixture into the molds, pressing down gently to fill evenly.
  6. Freeze and enjoy: Freeze for at least 2 hours, or until firm. Remove from the molds and store in the refrigerator or freezer.
