Salmon Pasta Recipe Without Cream

Ingredients:

  • 2 boneless salmon fillets
  • 250 grams dried spaghetti
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 1 small shallot, diced
  • 1 tablespoon capers
  • 1 fresh lemon
  • 2 tablespoons fresh parsley
  • Black pepper
  • Parmesan cheese (optional)

Instructions:

  1. Cook pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente, reserving 2 cups pasta water.
  2. Cook salmon: Heat olive oil in a skillet over medium-high heat. Cook salmon, skin-side down, for 3-4 minutes per side. Remove from skillet and set aside.
  3. Sauté vegetables: In the same skillet, melt butter and cook shallots until softened. Add garlic and cook for 2 minutes. Deglaze with white wine. Add capers and cook for 1 minute.
  4. Combine pasta and sauce: Add cooked pasta to skillet. Toss to coat with sauce. Add reserved pasta water as needed to achieve desired consistency.
  5. Serve: Serve pasta with salmon, topped with fresh parsley, lemon slices, black pepper, and Parmesan cheese (if desired).

Optional additions:

  • For extra flavor: Add a teaspoon of lemon zest to the sauce.
  • For a smoky flavor: Add a pinch of smoked paprika to the sauce.
  • For a tangy kick: Add a tablespoon of Dijon mustard to the sauce.
  • For additional vegetables: Add asparagus, spinach, or peas to the dish.
