Easy Marinated Olives with Garlic and Herbs


Ingredients:

  • 4 cloves garlic, thinly sliced
  • 4 bay leaves
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 teaspoon fennel seeds, slightly crushed
  • 1 lemon, zested
  • 1 cup olive oil
  • 1 pound mixed olives
Optional additions:
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup crumbled feta cheese
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Combine ingredients: In a medium saucepan, combine garlic, bay leaves, rosemary, thyme, fennel seeds, lemon zest, and olive oil.
  2. Cook: Set over medium-low heat and cook for about 5 minutes, or until fragrant. If it begins to simmer or smoke, reduce heat.
  3. Assemble: Place olives in a large, heat-safe bowl. Pour olive oil mixture over olives. Add the juice of 1/2 lemon and gently toss to combine.

Optional additions:

  • For extra flavor: Add chopped sun-dried tomatoes, crumbled feta cheese, or red pepper flakes.
  • For a spicier kick: Increase the amount of red pepper flakes.
  • For a sweeter taste: Add a drizzle of honey or maple syrup.
