Ingredients:
- 1/4 red cabbage
- 1/2 cup apple cider vinegar or red wine vinegar
- 1/2 cup water
- 1 tablespoon sugar
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup chopped carrots
- 1/4 cup chopped celery
- 1/4 teaspoon red pepper flakes
Instructions:
- Cut cabbage: Remove the core from the cabbage and shred it with a mandolin slicer or knife.
- Combine ingredients: In a large glass jar or bowl, add cabbage, apple cider vinegar, water, sugar, garlic, salt, and pepper.
- Pickle: Seal the jar or cover the bowl. Set on the counter for at least 2 hours (up to 6), shaking or stirring occasionally.
- Store: Store tightly sealed in the refrigerator for 2-3 weeks.
Optional additions:
- For extra flavor: Add chopped carrots, celery, or red pepper flakes.
- For a sweeter taste: Increase the amount of sugar.
- For a spicier kick: Add a pinch of cayenne pepper.
