Easy Pickled Red Cabbage

Ingredients:

  • 1/4 red cabbage
  • 1/2 cup apple cider vinegar or red wine vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
Optional additions:
  • 1/4 cup chopped carrots
  • 1/4 cup chopped celery
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Cut cabbage: Remove the core from the cabbage and shred it with a mandolin slicer or knife.
  2. Combine ingredients: In a large glass jar or bowl, add cabbage, apple cider vinegar, water, sugar, garlic, salt, and pepper.
  3. Pickle: Seal the jar or cover the bowl. Set on the counter for at least 2 hours (up to 6), shaking or stirring occasionally.
  4. Store: Store tightly sealed in the refrigerator for 2-3 weeks.

Optional additions:

  • For extra flavor: Add chopped carrots, celery, or red pepper flakes.
  • For a sweeter taste: Increase the amount of sugar.
  • For a spicier kick: Add a pinch of cayenne pepper.
