Mini Meatloaf Recipe with Potatoes


Ingredients:

For the Meatloaf:

  • 1 pound ground beef (90/10)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3/4 teaspoon Worcestershire sauce
  • 2-4 tablespoons ketchup
  • 1/3 cup Romano or Parmesan cheese
  • 1/3 cup seasoned breadcrumbs
  • 1 large egg
  • Warm water (optional, if the mixture is too dry)

For the Potatoes:

  • 3-5 medium potatoes, peeled and thinly sliced
  • 2 teaspoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat Oven: Set your oven to 400°F (200°C).
  2. Prepare Muffin Tin: Spray a 12-cup muffin tin with cooking spray.
  3. Mix Meatloaf: Combine ground beef, garlic powder, salt, pepper, Worcestershire sauce, ketchup, cheese, breadcrumbs, and egg. Mix gently until just combined.
  4. Fill Muffin Tin: Divide the meatloaf mixture evenly among the muffin cups, pressing down to fill the cups halfway.
  5. Prepare Potatoes: Toss potato slices with olive oil, salt, pepper, and garlic powder.
  6. Top with Potatoes: Place potato slices on top of each meatloaf.
  7. Bake: Bake for 20 minutes.
  8. Add Cheese: Sprinkle cheese over each meatloaf and potato cup.
  9. Finish Baking: Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Cool and Serve: Let cool for a few minutes before serving.
