Overnight Orange French Toast with Blueberry Orange Syrup

 

Ingredients:

For the French toast:

  • 6 large slices French bread
  • 3/4 cup fresh squeezed orange juice
  • 1/2 cup half and half
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon  
  • 1-2 tablespoons butter
For the Blueberry Orange Sauce:
  • 1 cup fresh squeezed orange juice
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon or lime juice
  • 1 teaspoon vanilla extract
  • 2-3 cups blueberries  

Optional additions:
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 tablespoon maple syrup

Instructions:

  1. Prepare French toast: Arrange bread slices in a single layer in a large pan. Pour custard sauce over bread slices. Flip to coat. Cover with plastic wrap and refrigerate overnight.
  2. Make blueberry orange sauce: In a small saucepan, whisk together orange juice, sugar, cornstarch, lemon juice, and vanilla extract. Add blueberries and cook over medium heat until sauce is thickened.
  3. Cook French toast: Heat a griddle or pan to medium. Add butter. As soon as butter is melted, place French toast slices on griddle. Cook 2-3 minutes per side, or until golden brown and center is firm to touch.
  4. Serve: Serve warm French toast with Blueberry Orange Sauce.

Optional additions:

  • For extra flavor: Add ground nutmeg or ground cloves to the custard sauce.
  • For a sweeter sauce: Add maple syrup to the Blueberry Orange Sauce.
  • For a thicker sauce: Add an extra tablespoon of cornstarch to the Blueberry Orange Sauce.
