Skillet Greek Chicken

Ingredients:

  • 2 pounds boneless, skinless chicken breasts, cubed
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Toppings:

  • 1 cup English cucumber, diced
  • 1 cup grape or cherry tomatoes, diced
  • 3/4 cup feta crumbles
  • 3/4 cup tzatziki sauce
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives

Instructions:

  1. Marinate: In a large bowl, combine chicken, Greek yogurt, lemon juice, olive oil, red wine vinegar, oregano, garlic, salt, and pepper. Marinate for at least 30 minutes, or up to 24 hours.
  2. Grill: Preheat grill to medium-high heat. Grill chicken, turning occasionally, until cooked through and slightly charred.
  3. Serve: Serve chicken over rice, quinoa, or salad. Top with cucumber, tomatoes, feta, tzatziki, red onion, and Kalamata olives.
