Ingredients:
- 2 pounds boneless, skinless chicken breasts, cubed
- 1/4 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Toppings:
- 1 cup English cucumber, diced
- 1 cup grape or cherry tomatoes, diced
- 3/4 cup feta crumbles
- 3/4 cup tzatziki sauce
- 1/2 cup red onion, diced
- 1/2 cup Kalamata olives
Instructions:
- Marinate: In a large bowl, combine chicken, Greek yogurt, lemon juice, olive oil, red wine vinegar, oregano, garlic, salt, and pepper. Marinate for at least 30 minutes, or up to 24 hours.
- Grill: Preheat grill to medium-high heat. Grill chicken, turning occasionally, until cooked through and slightly charred.
- Serve: Serve chicken over rice, quinoa, or salad. Top with cucumber, tomatoes, feta, tzatziki, red onion, and Kalamata olives.
