Spinach Egg Muffins with Feta

Ingredients:

  • 12 large eggs
  • 2 cups spinach, roughly chopped
  • 100 grams feta cheese, crumbled
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped red onion (optional)
  • 1/4 teaspoon dried oregano (optional)
  • Butter or olive oil, for greasing

Instructions:

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. Prepare spinach: Sauté spinach in a pan until wilted. Drain excess liquid.
  3. Combine ingredients: In a large bowl, whisk together eggs, salt, and pepper. Add spinach, feta cheese, red onion (if using), and oregano (if using). Mix well.
  4. Bake: Divide the mixture evenly among the muffin tins. Bake for 18-20 minutes, or until set.
  5. Serve: Serve immediately or store in an airtight container in the fridge for up to 5 days.

Optional Additions:

  • For extra flavor: Add sun-dried tomatoes, olives, or fresh herbs like basil or dill.
  • For a richer texture: Add a tablespoon of cream cheese or Greek yogurt to the egg mixture.
  • For a spicier kick: Add a pinch of red pepper flakes.
