Creamy Scrambled Eggs with Smoked Salmon

Ingredients:

  • 6 large eggs
  • 2 ounces room temperature cream cheese, cut into small pieces
  • 2 tablespoons heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 6 ounces cold-smoked salmon, chopped into small pieces
  • 2 tablespoons chopped chives or scallions
Optional additions:
  • 1/4 cup grated Parmesan cheese
  • A pinch of red pepper flakes
  • A handful of fresh spinach

Instructions:

  1. Prep ingredients: Crack eggs into a medium bowl. Add cream cheese, heavy cream, salt, and pepper. Whisk until combined.
  2. Cook eggs: Melt butter in a nonstick skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are set but still slightly creamy.
  3. Add salmon and mix-ins: Add smoked salmon, chives, and any optional ingredients to the skillet. Stir gently to combine.
  4. Serve: Serve immediately, garnished with additional chives or scallions.
