Berry Oatmeal Muffins

 

Ingredients:

  • 3/4 cup quick-cooking oats
  • 1/4 cup wheat germ
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 3/4 cup blueberries
  • 1/3 cup quick-cooking oats
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Directions:

  1. Preheat oven to 400 degrees F (200 degrees C). 
  2. Lightly grease 12 muffin cups.
  3. In a large bowl, combine the 3/4 cup oats, wheat germ, flour, sugar, walnuts, salt, and baking powder.
  4. In a separate bowl, whisk together the milk, oil, and egg.
  5. Add the wet ingredients to the dry ingredients and stir just until combined.
  6. Fold in the blueberries.
  7. Scoop the batter into the prepared muffin cups.
  8. In a small bowl, combine the 1/3 cup oats, brown sugar, and cinnamon.
  9.  Sprinkle over the batter in the muffin cups.
  10. Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  11. Let the muffins cool in the pan for a few minutes before removing them to a wire rack to cool completely.
