### Ingredients:
- 6 medium-sized potatoes
- 6 strips of bacon, chopped into small pieces
- 2 heads of garlic, for roasting
- 2 tablespoons olive oil, for drizzling
- Fresh thyme
- 3 cloves garlic, minced
- Salt, to taste
### Instructions:
1. **Prepare Potatoes:**
- Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper.
- Wash the potatoes thoroughly under running water. Slice them thinly, making sure not to cut all the way through. You can place a serving spoon alongside the potato to prevent the knife from slicing all the way through.
2. **Stuff Potatoes:**
- Stuff the sliced potatoes with chopped bacon pieces and some fresh thyme leaves in between the slices.
3. **Prepare Garlic:**
- Slice off the top of each head of garlic to expose the cloves. Place them alongside the potatoes on the baking dish.
4. **Drizzle and Bake:**
- Drizzle the potatoes and garlic with olive oil.
- Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
5. **Continue Baking:**
- Remove the foil and continue baking for another 30 minutes or until the potatoes are tender. Cooking time may vary depending on the size of the potatoes. To check for doneness, insert a knife into a potato – it should slide in easily.
6. **Finish and Serve:**
- Once the potatoes are fully cooked, remove them from the oven.
- Garnish with minced garlic, fresh thyme leaves, and sprinkle with salt to taste.
- Serve hot as a delicious side dish or appetizer.
