Creamy Potato Soup with Italian Sausage Recipe

 

Ingredients:

  • - 1 pound Italian sausage (mild or spicy, based on preference)
  • - 4 cups russet potatoes, peeled and diced into small cubes
  • - 1 medium onion, chopped
  • - 3 cloves garlic, minced
  • - 4 cups chicken broth
  • - 1 cup heavy cream
  • - 1 cup milk

Instructions:


1. **Cook the Italian Sausage:**

   - Remove the sausage from its casing and crumble it into the pot. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove cooked sausage and set aside.

4. **Simmer the Soup:**

   - Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until potatoes are tender.


5. **Blend the Soup:**

   - Using an immersion blender or regular blender (in batches), carefully puree the soup until smooth and creamy.


6. **Combine Ingredients:**

   - Return the pureed soup to the pot. Stir in the cooked Italian sausage.


7. **Add Cream and Milk:**

   - Pour in heavy cream and milk, stirring continuously to combine. Simmer for an additional 5-10 minutes to meld flavors together.


8. **Adjust Seasoning and Serve:**

   - Taste and adjust seasoning with more salt and pepper if needed.

   - Ladle the soup into bowls and garnish with fresh parsley if desired.
