Parmesan Crusted Potatoes

 

Ingredients:

  • 5 medium red potatoes, peeled (or Yukon gold potatoes)
  • ½ cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 3 tbsp olive oil
  • ½ tsp sea salt, or to taste
  • ½ tbsp chopped fresh parsley, for garnish

Instructions:

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat.

  2. Cut the peeled potatoes in half lengthwise, then slice each half into ½-inch (1.25 cm) thick slices with a sharp knife.

  3. In a large bowl, combine the sliced potatoes with grated Parmesan cheese, paprika, garlic powder, olive oil, and sea salt. Mix well until the potatoes are evenly coated with the seasoning mixture.

  4. Arrange the seasoned potato slices in a single layer on the prepared baking sheet, placing them flat side down.

  5. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges.

  6. Remove the baking sheet from the oven and carefully flip each potato slice over using tongs or a spatula. Return to the oven and bake for an additional 10-15 minutes, or until the potatoes are cooked through and crispy.

  7. Once baked to your desired crispiness, transfer the potatoes to a serving dish. Garnish with chopped fresh parsley and additional grated Parmesan cheese, if desired.

Notes:

  • Feel free to customize the seasonings by adding black pepper, onion powder, Italian seasoning, red pepper flakes, or fresh garlic to suit your taste.
  • You can use other types of potatoes such as baby potatoes, Yukon gold, russet, or baby gold potatoes.
  • For a richer flavor, substitute melted butter for the olive oil.
