Ingredients:
- 1 package yellow cake mix (regular size)
- 2 ½ cups old-fashioned oats
- ¾ cup butter, melted
- 1 jar (12 ounces) blueberry preserves
- ⅓ cup fresh blueberries
- 1 tablespoon lemon juice
- ⅓ cup finely chopped pecans
- 1 teaspoon ground cinnamon
Directions:
Preheat Oven:
- Preheat your oven to 350°F (175°C).
Prepare Crust:
- In a large bowl, mix the cake mix, oats, and melted butter until crumbly. Press 3 cups of this mixture into a greased 9-inch square baking pan. Bake for 15 minutes and let it cool on a wire rack for 5 minutes.
Prepare Filling:
- In a small bowl, combine blueberry preserves, fresh blueberries, and lemon juice. Spread this mixture over the partially cooled crust.
Add Topping:
- Stir the pecans and cinnamon into the remaining crumb mixture. Sprinkle this mixture over the blueberry layer.
Bake:
- Bake for an additional 18-20 minutes, or until the topping is lightly browned. Allow the bars to cool on a wire rack before cutting into squares.
