Blueberry Crumble Bars

 

Ingredients:

  • 1 package yellow cake mix (regular size)
  • 2 ½ cups old-fashioned oats
  • ¾ cup butter, melted
  • 1 jar (12 ounces) blueberry preserves
  • ⅓ cup fresh blueberries
  • 1 tablespoon lemon juice
  • ⅓ cup finely chopped pecans
  • 1 teaspoon ground cinnamon

Directions:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C).
  2. Prepare Crust:

    • In a large bowl, mix the cake mix, oats, and melted butter until crumbly. Press 3 cups of this mixture into a greased 9-inch square baking pan. Bake for 15 minutes and let it cool on a wire rack for 5 minutes.
  3. Prepare Filling:

    • In a small bowl, combine blueberry preserves, fresh blueberries, and lemon juice. Spread this mixture over the partially cooled crust.
  4. Add Topping:

    • Stir the pecans and cinnamon into the remaining crumb mixture. Sprinkle this mixture over the blueberry layer.
  5. Bake:

    • Bake for an additional 18-20 minutes, or until the topping is lightly browned. Allow the bars to cool on a wire rack before cutting into squares.
