Harvest Chicken Salad

 

Ingredients:

  • 2/3 cup plain Greek yogurt
  • 2 tablespoons mayonnaise (optional; you can replace with additional Greek yogurt if preferred)
  • 2 tablespoons milk
  • 1 tablespoon whole grain mustard
  • Juice of 1/2 lemon
  • 2 teaspoons honey
  • 1/4 teaspoon onion powder
  • Kosher salt and fresh ground black pepper, to taste
  • 3 cooked chicken breasts, diced
  • 1 apple, cored and diced
  • 1 pear, cored and diced
  • 1/4 cup dried cranberries
  • 1/4 cup toasted chopped pecans

Instructions:

  1. Make the Dressing: In a large bowl, whisk together the Greek yogurt, mayonnaise (if using), milk, whole grain mustard, lemon juice, honey, onion powder, salt, and pepper. Taste and adjust seasoning as needed.

  2. Combine Salad Ingredients: Add the diced chicken breasts, diced apple, diced pear, dried cranberries, and toasted pecans to the bowl with the dressing.

  3. Mix Together: Gently stir everything together until the chicken and fruit are evenly coated with the dressing.

  4. Serve: Serve the Harvest Chicken Salad in lettuce cups, wrapped in a tortilla, or on bread as desired.

  5. Enjoy: This salad is delicious served chilled and makes for a satisfying meal or a tasty filling for sandwiches or wraps.
