Mexican Cucumber Salad


Ingredients

  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise (can be light)
  • 2 tablespoons cotija cheese (see notes)
  • 1 lime (zest and juice)
  • ½ teaspoon chili powder
  • 1 clove garlic, minced
  • 6 mini cucumbers, sliced thin
  • 1 cup frozen corn, thawed
  • ¼ cup cilantro, minced
  • 2 tablespoons minced red onion
  • Sea salt, to taste

Instructions

  1. Prepare the Dressing: In a medium-sized bowl, combine the sour cream, mayonnaise, cotija cheese, lime zest and juice, chili powder, and minced garlic. Mix well until all ingredients are fully incorporated.
  2. Combine Salad Ingredients: Add the sliced mini cucumbers, thawed corn, minced cilantro, and minced red onion to the bowl with the dressing. Mix the salad ingredients until everything is well combined.
  3. Season: Season the salad to taste with sea salt.
  4. Serve: Serve immediately or chill in the refrigerator until ready to serve.

Notes

  • Cotija cheese can be substituted with feta cheese if desired.
  • For added flavor, you can toast the corn in a skillet before adding it to the salad.
