Blueberry Soft Baked Bars


Ingredients:

  • For the Dough:

    • 110 g oat flour (finely ground oats)
    • 50 g ground almonds
    • 1/4 tsp baking powder
    • 1/2 tsp cinnamon
    • Pinch of salt
    • 2 tbsp maple syrup or honey
    • 2 tbsp melted coconut oil
    • 1 tbsp milled flaxseed or ground chia seeds
    • 3 tbsp water
  • For the Blueberry Filling:

    • 200 g frozen blueberries (or other berries)
    • 2.5 tbsp chia seeds
    • 1-2 tbsp maple syrup (to taste)
    • 1 tbsp lemon juice

Instructions:

  1. Prepare the Blueberry Filling:

    • In a small saucepan, cook blueberries with maple syrup and lemon juice over low/medium heat, mashing the berries with a wooden spoon until well blended.
    • Remove from heat and stir in chia seeds. Let the mixture cool completely; it will thicken as it cools.
  2. Make the Dough:

    • Mix milled flaxseed with water and let sit for 10-15 minutes.
    • Combine oat flour, ground almonds, cinnamon, baking powder, and salt in a large bowl. Add maple syrup, melted coconut oil, and the flaxseed mixture. Mix until well combined.
  3. Assemble the Bars:

    • Divide the dough into two portions and roll each between two sheets of parchment paper into rectangles (about 1/4" thick). Trim any ragged edges.
    • Spread blueberry jam along the center of each rectangle. Fold one side of the dough over the filling, then fold the other side to enclose. Roll gently into logs and slice into 3 bars per log (6 bars total).
  4. Bake:

    • Air-Fryer: Cook at 180°C (350°F) for 10-12 minutes.
    • Oven: Bake in a preheated oven at 180°C (160°C fan)/350°F for 20-25 minutes until golden brown.
  5. Cool and Enjoy:

    • Allow to cool before enjoying. Store in an airtight container in the fridge for up to 4 days. Reheat if desired.

Notes:

  • For extra crunch, consider sprinkling a few chopped nuts on top before baking.
