Ingredients:
- 1 everything bagel, split
- 2 tablespoons unsalted butter, softened
- 2 large eggs
- 1 tablespoon water
- Kosher salt, to taste
- Black pepper, to taste
- 2 ounces cold-smoked salmon (optional)
- Caviar or sliced avocado (optional)
Directions:
Prepare Bagel:
- If needed, use a paring knife to carefully widen the holes in each bagel half to 1¾ inches in diameter.
- Spread butter evenly on both sides of the bagel halves.
Cook Bagel:
- Heat a 12-inch skillet over medium heat. Place bagel halves, cut sides up, in the skillet. Cook until golden brown, about 2-3 minutes.
- Flip bagel halves so the cut sides are down. Reduce heat to low.
Cook Eggs:
- Crack an egg into each bagel hole. Pour 1 tablespoon of water around the edge of the skillet.
- Immediately cover the skillet and cook until the egg whites are set and yolks are cooked to your liking, about 5-8 minutes.
Finish and Serve:
- Transfer bagel halves to a plate. Season with kosher salt and black pepper.
- Top with cold-smoked salmon and caviar or sliced avocado if desired.
