Ricotta-Herb Savory Scones


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 ¼ teaspoons sugar
  • 5 tablespoons chilled unsalted butter
  • ½ cup green onions or scallions, chopped
  • ¼ cup fresh parsley, minced
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, minced
  • 1 cup ricotta cheese
  • ⅔ cup milk
  • 1 large egg, beaten with 1 teaspoon water (for egg wash)
  • Sea salt, black pepper, smoked paprika (for topping)

Instructions

  1. Preheat Oven:

    • Preheat your oven to 425°F (220°C).
  2. Prepare Dry Ingredients:

    • In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. Incorporate Butter:

    • Grate chilled butter into the flour mixture. Use a fork to mix until the texture resembles coarse meal.
  4. Add Flavorings:

    • Stir in chopped scallions, parsley, thyme, and rosemary.
    • Add ricotta cheese, then pour in milk. Stir until just combined.
  5. Shape and Cut Dough:

    • Turn dough out onto a lightly floured surface. Knead briefly, about 2-3 times.
    • Pat dough into a 9-inch rectangle. Use a knife dipped in flour to cut into 12 equal pieces.
  6. Prepare for Baking:

    • Transfer scones to a parchment-lined baking sheet.
    • Brush tops with the egg wash.
    • Sprinkle with sea salt, black pepper, and smoked paprika.
  7. Bake:

    • Bake for 15-20 minutes, or until golden brown.
