Three-Cheese Pesto Turkey Lasagna


Ingredients:

  • 1 pound ground turkey
  • 1 small finely diced onion
  • 3 cloves minced garlic
  • 1 jar (24 oz) pasta sauce
  • Salt and pepper to taste
  • 1 1/2 cups ricotta cheese
  • 1 cup prepared pesto
  • 9 no-boil lasagna noodles
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Minced fresh basil for garnishing (optional)

Instructions:

  1. Brown ground turkey, onion, and garlic in a large skillet over medium-high heat. Reduce heat and add pasta sauce. Season with salt and pepper.
  2. In a small bowl, whisk ricotta cheese and pesto until smooth.
  3. Spread a thin layer of meat sauce in the bottom of a 13x9 baking pan.
  4. Layer with 3 lasagna noodles, 1/3 of the ricotta pesto, and 1/3 of the meat sauce. Repeat layers three times, ending with meat sauce.
  5. Sprinkle with mozzarella and Parmesan cheese. Cover with foil.
  6. Bake at 375°F for 40-45 minutes, or until cheese is melted and lasagna noodles are tender.
  7. Let stand 10 minutes before slicing and serving. Garnish with minced basil if desired.

Tips:

  • For a richer flavor, use homemade pasta sauce.
  • You can substitute no-boil lasagna noodles with regular lasagna noodles that need to be cooked beforehand.
  • To make this dish vegetarian, use ground beef or lentils instead of ground turkey.
