Chicken Sandwich Recipe

Ingredients

  • 2 chicken fillets (strips or rotisserie)
  • 1 tablespoon oil
  • 4 tablespoons roasted veggie dip (see recipe)
  • 1 avocado, smashed
  • ¼ red onion, finely sliced
  • Mixed leafy greens (lettuce, rocket, etc.)
  • Salt and pepper to taste
  • Chili spice or flakes (optional)
  • Bread slices (your choice)
  • ½ juice of fresh lemon
  • Lettuce leaves (plain or mixed colors)
  • Microgreens for topping

Instructions

  1. Prepare the Chicken:

    • If using chicken fillets, butterfly them by slicing along the long side, stopping before cutting all the way through. Flatten with your hand.
    • Season both sides with chicken spice, salt, pepper, and chili if desired.
  2. Cook the Chicken:

    • Heat a skillet over medium-high heat and add 1 tablespoon of oil.
    • Once hot, add the chicken fillets. Cook for about 3 minutes per side until cooked through. Let rest before slicing.
  3. Prepare the Avocado:

    • Mash the avocado in a bowl with a fork. Add ½ juice of fresh lemon, and season with salt and pepper.
  4. Toast the Bread:

    • Toast your bread slices until golden brown.
  5. Assemble the Toast:

    • Spread a spoonful of smashed avocado on each slice of toast.
    • Layer with lettuce leaves, roasted veggie dip, more avocado, mixed greens, and sliced onion.
    • Finish with a drizzle of roasted veggie dip and top with microgreens.
