Ingredients
- 2 chicken fillets (strips or rotisserie)
- 1 tablespoon oil
- 4 tablespoons roasted veggie dip (see recipe)
- 1 avocado, smashed
- ¼ red onion, finely sliced
- Mixed leafy greens (lettuce, rocket, etc.)
- Salt and pepper to taste
- Chili spice or flakes (optional)
- Bread slices (your choice)
- ½ juice of fresh lemon
- Lettuce leaves (plain or mixed colors)
- Microgreens for topping
Instructions
Prepare the Chicken:
- If using chicken fillets, butterfly them by slicing along the long side, stopping before cutting all the way through. Flatten with your hand.
- Season both sides with chicken spice, salt, pepper, and chili if desired.
Cook the Chicken:
- Heat a skillet over medium-high heat and add 1 tablespoon of oil.
- Once hot, add the chicken fillets. Cook for about 3 minutes per side until cooked through. Let rest before slicing.
Prepare the Avocado:
- Mash the avocado in a bowl with a fork. Add ½ juice of fresh lemon, and season with salt and pepper.
Toast the Bread:
- Toast your bread slices until golden brown.
Assemble the Toast:
- Spread a spoonful of smashed avocado on each slice of toast.
- Layer with lettuce leaves, roasted veggie dip, more avocado, mixed greens, and sliced onion.
- Finish with a drizzle of roasted veggie dip and top with microgreens.
