Ingredients:
- 1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 stick butter
- 8-10 cloves garlic, minced
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon hot sauce (more if desired)
- 2 teaspoons red pepper flakes
- 1/3 cup fresh parsley, minced
- Fresh basil
- Sliced avocado
- Lemon wedges
Instructions:
- Prepare chicken: Marinate chicken pieces in olive oil and seasoning mixture for at least 30 minutes (or up to 4 hours).
- Make garlic parmesan butter sauce: In a microwave-safe bowl, combine butter, garlic, Parmesan cheese, hot sauce, red pepper flakes, and parsley. Heat until partially melted and whisk together. Set aside 1/3 of the sauce for basting cooked chicken.
- Cook chicken: Cook chicken skewers in an air fryer at 400°F for 5 minutes, flip, baste with sauce, and cook for another 5-6 minutes, or until internal temperature reaches 165°F.
- Finish with sauce: Baste cooked chicken with remaining garlic parmesan butter sauce. Sprinkle with additional Parmesan cheese and fresh basil.
Optional additions:
- For extra heat: Add more red pepper flakes or hot sauce to the seasoning mix or garlic parmesan butter sauce.
- For a smoky flavor: Add a teaspoon of smoked paprika to the seasoning mix.
- For a tangy kick: Add a tablespoon of lemon juice or orange zest to the garlic parmesan butter sauce.
- For additional vegetables: Grill or roast cherry tomatoes or zucchini to serve alongside the chicken skewers.
