Ingredients:
- 1 cup old-fashioned rolled oats
- 1/4 cup unsweetened shredded coconut
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds or flax seeds
- 1 pinch salt
- 1 tablespoon sunflower seeds
- 1 tablespoon pumpkin seeds
- 3 tablespoons dried cranberries
- 1 1/4 cups almond milk or milk of choice
- 1 cup plain yogurt or coconut yogurt
- 1/2-1 teaspoon pure vanilla extract
- 1 large Granny Smith apple or apple of choice, cored and grated (peeling optional)
- 1/4 cup chopped pecans/walnuts or slivered almonds
- 1/4 cup chopped dried apricots
- 1/4 cup chopped walnuts or almonds
- 1/4 teaspoon ground cinnamon
Instructions:
- Combine dry ingredients: In a medium bowl, toss rolled oats, shredded coconut, chia seeds, hemp seeds, salt, sunflower seeds, pumpkin seeds, and dried cranberries.
- Add wet ingredients: Add milk, yogurt, vanilla extract, and grated apple to the oat mixture. Stir well to combine.
- Refrigerate overnight: Cover bowl in plastic wrap or transfer to individual jars or containers. Refrigerate overnight.
- Serve: Enjoy right from the jar or spoon out 1-1 1/2 cups of muesli into a bowl. Stir in a splash of milk or dollop of yogurt if desired.
- Top with toppings: Top with your favorite toppings (sliced or chopped apples, nut butter dollops, yogurt dollops, pomegranate arils, citrus slices).
Optional additions:
- For extra flavor: Add chopped dried apricots, walnuts, almonds, or ground cinnamon.
- For a sweeter taste: Add a drizzle of honey or maple syrup.
- For a crunchier texture: Add more nuts or seeds.
