Bircher Muesli Recipe

Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds or flax seeds
  • 1 pinch salt
  • 1 tablespoon sunflower seeds
  • 1 tablespoon pumpkin seeds
  • 3 tablespoons dried cranberries  
  • 1 1/4 cups almond milk or milk of choice
  • 1 cup plain yogurt or coconut yogurt
  • 1/2-1 teaspoon pure vanilla extract
  • 1 large Granny Smith apple or apple of choice, cored and grated (peeling optional)
  • 1/4 cup chopped pecans/walnuts or slivered almonds
Optional additions:
  • 1/4 cup chopped dried apricots
  • 1/4 cup chopped walnuts or almonds
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Combine dry ingredients: In a medium bowl, toss rolled oats, shredded coconut, chia seeds, hemp seeds, salt, sunflower seeds, pumpkin seeds, and dried cranberries.
  2. Add wet ingredients: Add milk, yogurt, vanilla extract, and grated apple to the oat mixture. Stir well to combine.
  3. Refrigerate overnight: Cover bowl in plastic wrap or transfer to individual jars or containers. Refrigerate overnight.
  4. Serve: Enjoy right from the jar or spoon out 1-1 1/2 cups of muesli into a bowl. Stir in a splash of milk or dollop of yogurt if desired.
  5. Top with toppings: Top with your favorite toppings (sliced or chopped apples, nut butter dollops, yogurt dollops, pomegranate arils, citrus slices).

Optional additions:

  • For extra flavor: Add chopped dried apricots, walnuts, almonds, or ground cinnamon.
  • For a sweeter taste: Add a drizzle of honey or maple syrup.
  • For a crunchier texture: Add more nuts or seeds.
