Hash Browns

Ingredients:

  • 4 medium floury potatoes
  • 1 small onion
  • 1 egg
  • 1/2 teaspoon salt
  • Fresh black pepper
  • Vegetable oil, for frying
Optional additions:
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Prepare potatoes and onion: Peel and wash potatoes with cold water. Pat dry with a paper towel. Peel onion but do not cut or slice.
  2. Grate: Grate potatoes and onion coarsely using a mandolin slicer.
  3. Remove excess moisture: Put the potato-onion mixture in a clean tea towel and squeeze out excess liquid.
  4. Combine ingredients: Put the potato-onion mixture in a large bowl. Beat a medium-sized egg and add to the mixture. Stir to combine. Add salt and pepper.
  5. Add optional ingredients: Add optional ingredients like shredded cheddar cheese, diced bell pepper, or red pepper flakes.
  6. Heat skillet: Preheat a skillet to medium-high heat with olive oil.
  7. Form patties: Take a big spoon and put a round heap into the skillet. Press down to slightly flatten the patties.
  8. Cook: Turn the heat to medium. Bake until golden brown on one side, then flip and bake the other side.

Optional additions:

  • For extra flavor: Add shredded cheddar cheese, diced bell pepper, or red pepper flakes.
  • For a richer texture: Use a combination of butter and olive oil.
  • For a spicier kick: Increase the amount of red pepper flakes.
