Ingredients:
- 4 medium floury potatoes
- 1 small onion
- 1 egg
- 1/2 teaspoon salt
- Fresh black pepper
- Vegetable oil, for frying
- 1/4 cup shredded cheddar cheese

Instructions:
- Prepare potatoes and onion: Peel and wash potatoes with cold water. Pat dry with a paper towel. Peel onion but do not cut or slice.
- Grate: Grate potatoes and onion coarsely using a mandolin slicer.
- Remove excess moisture: Put the potato-onion mixture in a clean tea towel and squeeze out excess liquid.
- Combine ingredients: Put the potato-onion mixture in a large bowl. Beat a medium-sized egg and add to the mixture. Stir to combine. Add salt and pepper.
- Add optional ingredients: Add optional ingredients like shredded cheddar cheese, diced bell pepper, or red pepper flakes.
- Heat skillet: Preheat a skillet to medium-high heat with olive oil.
- Form patties: Take a big spoon and put a round heap into the skillet. Press down to slightly flatten the patties.
- Cook: Turn the heat to medium. Bake until golden brown on one side, then flip and bake the other side.
Optional additions:
- For extra flavor: Add shredded cheddar cheese, diced bell pepper, or red pepper flakes.
- For a richer texture: Use a combination of butter and olive oil.
- For a spicier kick: Increase the amount of red pepper flakes.
