Scrambled Eggs with Ricotta and Chives


Ingredients:

  • 1 tablespoon butter
  • 3 large eggs
  • 1/2 cup ricotta cheese
  • 1/4 cup chives, chopped
  • Salt and pepper to taste
Optional additions:
  • 1/4 cup chopped spinach or kale
  • 1/4 cup diced red bell pepper
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Prepare chives: Wash and chop chives. Set aside.
  2. Melt butter: Melt butter in a pan over medium heat. Be careful not to burn it.
  3. Whisk egg mixture: In a large bowl, whisk together eggs, ricotta cheese, chopped chives, salt, and pepper.
  4. Cook scrambled eggs: Pour egg mixture into the preheated pan. Stir gently with a wooden spoon or spatula for about five minutes, or until eggs are scrambled and cooked to your liking.
  5. Serve: Top with more chives if desired. Serve and enjoy!

Optional additions:

  • For extra flavor: Add chopped spinach, kale, or red bell pepper.
  • For a spicier kick: Add red pepper flakes.
  • For a richer texture: Add a dollop of Greek yogurt or sour cream.
