Individual Pumpkin Cheesecake


Ingredients:

  • 1/2 package (4 oz) Neufchâtel cheese
  • 1 large egg
  • 1/4 cup fat-free Greek yogurt
  • 1/4 cup cooked pumpkin puree
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unflavored whey protein powder
  • 2 packets stevia
  • 1/2 teaspoon pumpkin pie spice

Instructions:

  1. Preheat Oven: Preheat oven to 325°F (163°C).
  2. Prepare Pan: Grease a 4-inch springform pan or a ceramic ramekin.
  3. Mix Ingredients: In a bowl, combine Neufchâtel cheese, egg, Greek yogurt, pumpkin puree, vanilla extract, whey protein powder, stevia, and pumpkin pie spice. Mix until smooth.
  4. Bake: Pour the batter into the prepared pan. Place the pan in a larger pan filled with about an inch of water. Bake for 15 minutes at 325°F, then reduce temperature to 200°F and bake for an additional 20 minutes.
  5. Cool: Let cool completely before serving.
